These Gingerbread Blondies are my shortcut to cozy: soft, chewy, a little nostalgic, and just enough sweet to pair perfectly with a cup of coffee or a dollop of whipped cream. They taste like the holidays without the fuss, coming together in one bowl and baking into golden, fragrant squares that feel like comfort you can hold in your hands. Whether you’re sharing them at a gathering or sneaking a warm one straight from the pan (no judgment here), these blondies are guaranteed to bring a little extra cheer to your kitchen.

Ingredients
1 Cup ( 2 sticks/227 g) unsalted butter, melted
1 1/2 Cups (300 g) light brown sugar, packed
2 large eggs, room temperature
2 TBS molasses
1 tsp Vanilla Extract
2 1./2 Cups (312.5 g) all purpose flour
1 tsp baking powder
1/2 teaspoon salt
1.5 tsp ground ginger
2 teaspoons ground cinnamon.
Preparation
Step 1
Preheat oven to 350 F. Line 9x9 inch pan with parchment paper. Set aside
Step 2
In a large bowl, combine butter and brown sugar. Mix well.
Step 3
Mix in eggs, molasses, and vanilla.
Step 4
In a separate medium bowl, whisk together the flour, ginger, cinnamon, baking powder, and salt.
Step 5
Gradually stir the flour mixture into the butter egg and sugar mixture until completely combined.
Step 6
Spread the batter evenly into the prepared pan. Bake for 25-33 minutes, or until a toothpick comes out clean from the main middle of the pan.
